Red Wine Braised Short Ribs

Ingredients:
Beef Short Ribs 1.5lbs
Tomato Paste/Puree - 3 heaping Tbsp
Dry Red Wine (1/2 a bottle)
Beef Stock - 2 Cups
Garlic Cloves - 5 large cloves
Kosher Salt
Ground Black Pepper
Olive Oil/Vegetable Oil
Fresh Herbs for Garnish
Directions:
Preheat oven to 330°
Liberally season short ribs with salt and pepper on all sides.
In your oven safe roasting pan, heat oil over high heat on cooktop.
Brown each side of short ribs for roughly 45 seconds, then flip back on bone side down and lower heat.
Add tomato puree/paste and swirl around for a few seconds before adding garlic and a little more salt to the pan. Continue stirring until garlic becomes fragrant, about 1 minute.
Add in red wine and begin deglazing the bottom of the pan with your wooden spoon. Bring the wine to a boil and let it reduce to half (about 10-15 minutes).
Add in beef broth (enough to bring the liquid above the bone, I used 2 cups.) Bring that liquid to a boil.
Once boiling, cover with lid and place in preheated oven for 2.5 hours.
Once time has finished, remove from oven and allow to rest for 5 min before eating.
I like to serve these atop mashed potatoes!
