Armadillo Eggs on the Ninja Woodfire

Air Fried & Smoked Armadillo Eggs? Say less. Ingredients and Directions are below 👇

Ingredients:

  • 8 Jalapeños

  • 4oz Cream Cheese, softened

  • 4 oz Shredded cheddar cheese

  • 1 lb Italian Sausage (whichever spice level you want)

  • 1 lb Pork Sausage

  • 1 lb Bacon

  • 2 cloves garlic, minced

  • garlic powder

  • smoked paprika

  • salt

  • pepper

  • Optional - Hot Sauce

Directions:

  1. Remove stem and hallow the jalapeños. I recommend pre-boiling the jalapeño for 4 minutes before stuffing them. This will make the jalapeños a little spicier, and they will have a better texture when you bite into them after they're done cooking. The jalapeños were still really crunchy when I didn't pre-boil them, and much more mild of a flavor.)

  2. Combine cream cheese, shredded cheese, garlic powder, paprika, salt and pepper (and hot sauce if you want) together until they are mixed throughout.

  3. Combine Italian sausage, pork sausage, garlic, onion powder, and salt & pepper. Stuff with Cream Cheese Mixture using a spoon or piping.

  4. Wrap stuffed jalapeño with your sausage blend. Easiest way is to make a ball, then flatten it out, then place the jalapeño on the sausage disc then wrap completely around.

  5. Once you've got a sausage 'egg', wrap that with 2 pieces of bacon, trying to cover all the sausage. - Spray wire basket with Pam or wipe with oil and place the 'eggs' into the basket.

  6. Cook at 380F on the air crisp mode with the smoker setting turned on.

  7. Cook for 30 minutes total, flipping them over halfway through, at the 15 minute mark.
