Ingredients:
1 lb - Peeled Shrimp (I used XL)
1 cup - Diced tomatoes
1 cup - Shredded Mozzarella Cheese (separated into 3/4 cup & 1/4 cup)
1/2 Cup - Shredded Parmesan Cheese (separated into half)
3/4 cup.- Whole (or 2%) Milk
1/4 Cup - Chicken broth
2 Tbsp - All Purpose Flour
2 Tbs - Parsley, chopped
6 Cloves of Garlic - Minced
4 Tbsp of Salted Butter
Salt & Pepper ----------------------------------------------------
12 oz - Pasta (Bowtie or Penne) - Cooked and drained
Directions:
Peel your shrimp, and take this time to get all of your ingredients ready. Doing this may seem tedious at first, but it really helps make this meal as simple as it gets once you start cooking!
Fill a pot of water for your pasta, and salt the water to make sure your pasta isn't bland. Place on high heat and get that thang boiling! Cook your pasta to al dente, then drain and set to the side. You will add in the pasta later.
Preheat oven to 350 degrees F.
Get a large, oven safe pan and preheat it over medium high heat. (I like to rub a light layer of olive oil around to coat the pan before starting). Place 2 Tbs of butter in the pan, and let it melt.
Once the butter has melted, throw in your garlic and cook until fragrant, about 30 seconds.
Add in your shrimp, parsley, salt and pepper. Cook shrimp for 2 minutes, or until just pink, and toss them. Cook for another 2 minutes, adding salt and pepper if needed/wanted.
Turn your eye all the way down and remove shrimp from pan. Make sure to leave all those juices in the pan, they'll come in handy later.
Bring your eye back to a medium low heat, and add your 2 Tbs of Butter. Let that melt then add 2Tbsp of All Purpose Flour. Stir/Whisk until the flour begins to turn golden brown, then add in your milk and broth. Once you see the liquid start to simmer, it should begin thickening up. Now its time for the CHEESE!
Add in your 3/4 cup of mozzarella & 1/4 shredded Parmesan, and incorporate it with your liquid. You will see your Alfredo sauce coming to life! (At this point if you want to add more cheese, or more milk to make it cheesier or creamier, do it!)
Add in your tomatoes, stir.
Add in your shrimp, stir.
Add in your cooked pasta, stir.
Once you've incorporated all your ingredients into this oven safe pan, add the rest of your cheese to the top of the dish and a little more parsley, then place in your preheated oven for 7-10 minutes until the top just begins to brown.
Remove from heat and burn the roof of your mouth because you just cant wait to take a bite!
