MEAT CANDY (aka Pork Belly Burnt Ends)

These are the absolute best! There's not much I like better than sweets and meats, but when you combine them, it creates something so delectable Betty Crocker doesn't even know what to do with it. Do yourself a favor and make these little bites of joy!

I smoked these meat candies on the Char-Griller Gravity 980 at 275 (f). They are the perfect appetizer for game days or cabin get aways. They are a bite of heaven every time and ready in just under 4 hours. So so yummy!!

Ingredients:

  • Pork Belly Slab - (enough to feed your crowd. In the video how to, I used 3 lbs.)

  • Favorite Pork Dry Rub

  • Honey

  • Brown Sugar

  • Butter

  • BBQ Sauce

Directions:

  1. Cube your pork belly to 1 1/2 inch cubes.

  2. Season each side with your favorite pork dry rub. I used like to use Butt Rub 🔗 https://geni.us/KKButtRub 🔗 because its the perfect amount of sweet and spicy.

  3. Place your “meat candy” fat side up on the grill grates or rack. It is easier to transfer them back and forth if you place them on wire baking rack.

  4. Smoke for 2 hours and no peaking. They should be probe tender. If there is any resistance, let them cook for another 30 minutes before checking again. .

  5. Pull from smoker and place them in a foil baking dish. Place the butter, cut into smaller pats throughout the pan. Cover the bites with brown sugar and honey.

  6. Cover with foil and place back in the smoker for another hour.

  7. Pull from smoker and mix the meat candies up within the juice. Cover the candies with your favorite bbq sauce, and pop back in the smoker for 15-30 minutes. Enough times to let the top caramelize a bit. You can turn the temp up on your grill if you’d like, but watch it!

  8. Pull from grill and place on the table. Make sure to grab a few for yourself and hide them. These babies are gone quick!!
