Simple Smoked Spatchcock Chicken | Char-Griller Gravity 980

There are few things I love more than a delicious and SIMPLE recipe. And this recipe may be simplest of all. If you haven't tried this simple smoked spatchcock chicken recipe on the char-griller gravity 980 then you are seriously missing out. Perfect, juicy chicken every time with little to no effort.

And of course, the Char griller gravity fed 980 makes smoking this chicken a breeze.

Ingredients:

  • Full chicken (both of mine were roughly 5lb)

  • Dry Seasoning of choice - I used Char-Griller Lemon Pepper and the Garlic & Herb blend.

Directions:

  1. Using kitchen shears, cut out the spine of the chicken. (You can save this for homemade chicken stock if you’d like!)

  2. To make it easier, make a small incisions on the cartilage of the breast bone. (This will help it break, in order for the chicken to lay flat.)

  3. Flip the chicken over, meat side up, and break your breast bone.

  4. Pat the chicken with a paper towel to absorb any excess moisture.

  5. Rub a small amount of oil all over your chicken, the season them with your seasoning of choice.

  6. Preheat your grill to 325° F, then place your chicken in the center of the grill, over indirect heat.

  7. Cook until internal temperature hits 160°F, about an hour and a half.

  8. Remove from grill and let rest 5 minutes before cutting.

  9. Enjoy!
