Balsamic Roasted Tomato & Spinach Squash Recipe | Spaghetti Squash Side Dish

Ingredients:
Spaghetti squash
Cherry/Snacking Tomatoes - Halved
Spinach
3 cloves garlic - Minced
Shredded/Grated Parmesan Cheese
2 Tbsp Butter
Balsamic Vinegar
Salt
Pepper
Garlic powder
Olive oil
Directions:
Preheat oven to 400°
Microwave Spaghetti Squash for 5 min to soften it up and make it easier to cut.
Half spaghetti squash, remove guys, then coat with light layer of olive oil.
Apply salt, pepper and garlic powder on the squash then place them cut side down on a baking sheet.
place spaghetti squash in preheated oven for 45 minutes.
After you’ve placed your squash in the oven, half your tomatoes, place in small baking dish, sprinkle with salt then cover with a light layer of balsamic vinegar (just enough to coat the bottom of the dish).
Flip them cut side down, then place in the oven for the last 20-25 minutes of the squash cook time. (This will be enough time to blister them a little on the top).
Remove your spaghetti squash and tomatoes and place aside to let cool. Go ahead and drain your tomatoes out of the vinegar from your dish, and set to the side. Flip your spaghetti squash over to let all that steam out and allow it to cool, 10 minutes.
Grab your squash and scrap it with a fork into a bowl, creating your “spaghetti” strands.
Preheat a medium size skillet at medium high heat and melt 2 Tbsp butter.
Once the butter has melted, add the garlic and let cook for 30-45 seconds, until it starts smelling yummy!!
Add your spinach, and drained tomatoes and stir until spinach is wilted.
Turn your heat all the way down, then add in your spaghetti squash strands. (Try and avoid adding any liquid that may have collected in the bottom of the squash bowl,).
Add in some parmesean cheese, and stir your squash lightly, incorporating it into the other ingredients.
Taste and add salt and pepper if needed.
Serve in a bowl and top with more cheese!
